Another successful Healthy Muffin Baking Session for Jessa! These muffins are Banana Chocolate Chip and eggless (because the Amazon Fresh groceries haven't arrived yet ;-) !INGREDIENTS1.5 cups of whole wheat flour1 cup of rolled oats1/2 cup of brown sugar2 teaspoons of baking powder1 teaspoon of baking soda1/2 teaspoon of salt6 ounces of almond milk4 ounces of cinnamon applesauce1/2 teaspoon of vanilla extract2 large, ripe bananaschocolate chipsTO DOPreheat oven to 400 degrees.In a bowl, combine flour, oats, sugar, baking powder, soda, and salt.In another bowl, mix together almond milk, applesauce, and vanilla.Put it in the wet mix in the blender along with the bananas and blend well.Stir the flour mixture into the banana mixture.Sprinkle in the chocolate chips and mix.Pour into the muffin pan.Bake for 20 minutes.Enjoy!
