Italian Lentil Recipe

There's been snow on the ground and winter viruses making their way through our home. These factors make me crave two things: hearty, healthy, home-cooked meals, and for life to be as easy as possible. Luckily, I've got one of my all time favorite recipes passed down from my grandmother and my mom - and a convenient grocery delivery service thanks to Peapod that I can count on to make both of those wishes a reality for me! Nothing tastes better when we're under the weather than our family's Italian lentil dish. It's packed with nutrients - especially iron which provides a much needed energy lift. It's also a perfect vegan and gluten-free option that the whole family can enjoy.

Last week, when my daughter and I were both home sick on snowy days, here is the delicious Italian lentil recipe that we made:

Italian Lentil Recipe (Vegan & Gluten-Free!)

Makes approximately 8 servings

Ingredients:

16 oz of lentils {rinse well & drain}
32 oz of crushed tomatoes with Italian herbs
32 oz of vegetable or chicken broth
1 large Spanish onion {chopped}
2 boxes of frozen chopped spinach
16 oz of elbow pasta (gluten-free if needed)
Olive oil
Italian seasonings
Red pepper flakes
Grated Romano cheese (not for the vegan option)

Italian lentil recipe

Directions:
1. Saute onion in a little olive oil until it is soft & golden.

2. Add crushed tomatoes and simmer for approximately 2 minutes.

3. Add broth.

4. Bring above to boil.

5. Add lentils.

6. Add any other Italian seasonings that you like and a few red pepper flakes.

7. Turn down the heat to a simmer or low flame and keep stirring the lentil mixture as it begins to simmer..

8. Cook approximately 45 minutes to 1 hour or until lentils are soft.

9. Add frozen spinach and simmer until cooked.

10. Cook pasta, drain, and add to the lentil mixture.

11. Add grated Romano cheese when serving if you are not vegan.

12. For a heartier meal, serve the lentils over elbow pasta, and enjoy!
